Veggie Tacos Recipe

This simple Veggie Taco recipe is something we came up with one night when we had no idea what to have for dinner. So, we got creative! Surprisingly our kids love this recipe… maybe even more than we do.

Veggie Tacos Ingredients


  • 1 Cup of dried rice.
  • 1 Can (14 oz) Refried black beans.
  • 1 Package of corn tortillas.
  • Guacamole. (quick step by step below in the instructions or Click for more detailed Guacamole recipe)
    • 3 Avocados.
    • 2 Plum tomatoes, diced.
    • 1 Clove of garlic, minced.
    • 1 Jalapeno, diced.
    • A heaping ¼ cup of white onion.
    • 1 lime, juiced.
    • 1 Tablespoon of coarse sea salt.
    • ¼ Cup of fresh cilantro.

Step by Step:

  1. Prepare guacamole (you can also use store-bought if you prefer)
  2. Make 1 cu. rice according to package instructions
  3. Pre-heat cast iron tortilla griddle for 3 mins. on high
  4. Add a few drops cooking oil to pan
  5. Place tortilla in pan and cook on each side for 30-45 sec., repeat with remaining tortilla shells
  6. Heat refried bean on low-med. until heated through, stirring occasionally
  7. Spread 1-2 spoonfuls of beans on a shell, then 1 spoonful of rice and top with a spoonful of guacamole
  8. Fold into a taco and enjoy! Repeat with remaining shells.

Detailed Instructions (with pictures):

For this recipe, we use a Cast-Iron tortilla Griddle, Tortilla Warmer,, and a mortar and pestle  . Although you don’t need all of those to recreate this recipe, they do make things more convenient and authentic!

Before we start, you’ll need to make your guacamole. Below is a brief overview of how to make our guacamole recipe or you can click here to get our detailed instructions.

  1. Dice 1/4 cu. onion and 1 jalepeno, then mince 1 clove garlic and add to mortar
  2. Using pestle, mash together until it begins to just break down
  3. Add the juice from 1 lime and 1 Tbsp. coarse sea salt
  4. Mash and grind until mixed and juiced
  5. Dice avocados and add to mortar,  gently mash until well blended
  6. Cut 2 plum tomatoes in half and remove the seeds, then dice and add to mortar
  7. Using a spoon, mix in tomatoes
  8. Add ripped cilantro leaves and mix guacamole with a spoon until blended


Now that you have your guacamole made, we can continue making the veggie tacos.

Make the 1 cup of rice according to the rice package instructions. Our rice takes 20 minutes to cook but we generally cook it for 17 minutes and leave it covered to rest until we are ready for it. This usually makes it a little more moist and fluffy.  (Also, if you have gaps between your lid and the pot like we do, you can roll up a sheet of paper towel and put that in the gap so that the steam can’t escape – that has made a big difference in our rice!)


While the rice starts cooking, turn the tortilla cast iron griddle  on high for 3 minutes and wrap the tortilla shell warming stone  in a paper towel, then heat in the microwave for 2 mins. When it is heated, place it back into the warming container.

Once the cast iron tortilla griddle is hot, add a few drops of cooking oil and place a tortilla shell down. Cook each side of the shell for 30-45 seconds. When the tortilla is cooked on both sides, place it into the tortilla warmer, making sure to replace the lid each time. Continue this process with the remaining shells. Keep the lid on the warmer until you are ready to serve.

When you have a few minutes remaining on the rice, place the refried back beans in a pot and warm on low until heated through, stirring occasionally. (We like using black beans and they have slightly less fat, but you could also substitute pinto refried beans if you prefer)

Now that you have everything cooked and ready to go, we can build the veggie tacos! Take a shell and spread a spoonful or two of the refried black beans over the entire tortilla (make sure you do the beans before the rice – otherwise it can get messy trying to get everything on the shell!). Then on one half, add a spoonful or two of the rice and on the other half, add a spoonful or two of the guacamole. You can also put some sort of  hot sauce or taco sauce on your veggie tacos, however it tastes delicious just as it is!

These plates are awesome and we never have to worry about our tacos falling over. There are also places for sides or salsa and chips. If you have kids, these plates are a must!
